Central, Lima’s acclaimed tasting menu restaurant, ranks #1 on the World’s 50 Best Restaurants 2023 list.
Helmed by owner-chef couple Virgilio Martínez and Pier Leon, their tasting menu allows you to experience Peru’s different elevations and ecosystems. The restaurant is a mainstay on the World’s 50 Best list, and gained even more global recognition when Martinez starred in an episode of Netflix’s hit documentary His Series. chef’s table.
This restaurant will hold the number one spot until next year. That’s because in 2019, the organization announced a rule change that would mean that once a restaurant reached the number one spot, it would no longer be eligible and would be removed from the list in the future. The changes to eligibility rules were initially touted as a diversity initiative, but Lisa Abend reported in 2019 that chefs who feared losing their top spots and damaging their reputations had pushed for the changes. It became clear that he was involved in lobbying activities. Central is very different from previous number one groups, but it will still be a few years before the winning group represents the entire world. After all, there are still only 10 number one restaurants.

Important Intel: Chef-owners Virgilio Martinez and Pier Leon take diners through Peru’s different ecosystems by borrowing ingredients and inspiration from different altitudes for each course on Central’s menu. The Lima flagship offers a 12-course menu and a 14-course menu for 1045 and 1250 pesos, respectively (approximately $288 and $345 in USD). Central is the first restaurant outside Europe or the United States to win the top honor, and the first to have a woman recognized as a sous chef or chef earn the number one spot.

important intel: Led by chef Rasmus Kofoed, Geranium is one of Denmark’s most famous culinary establishments and the first restaurant in the country to be awarded three Michelin stars. The restaurant’s new Nordic ultra-local cuisine has made Copenhagen a global dining destination and served as a training ground for many notable chefs. In 2016, Redzepi closed Noma. He opened a new Noma in Copenhagen in early 2018. The restaurant was considered for the 2019 list and ranked number two. And after a pandemic hiatus in 2020, the restaurant earned top honors on the 2021 list.

Important Inter: Mirazur, overlooking the Mediterranean Sea, isn’t known for being particularly influential, but Colagreco has made a name for himself over the years. The Italian-Argentine chef has honed his approach to French cuisine with side chefs Alain Passard and Alain Ducasse. He opened his Mirazur in 2006 and offered his menu of tastings inspired by his three themes: ocean, garden, and mountain. Its menu includes dishes such as fried skeleton and anchovies with lemon; Oysters, tapioca, shallot cream, and pear. Salt-crusted beets with caviar cream currently costs 260 euros per person, or about $295 USD.
Osteria FrancescanaModena, Italy

Important Inter: Osteria Francescana hovered around the top spot before moving into second place. Massimo Bottura’s Italian restaurant ranked him 2nd in 2015 and 3rd the year before. The first Italian restaurant to make it to the top of the list, Osteria Francescana is the place to be, thanks to quirky menu items like Chef Bottura’s “His 5 Years of Parmigiano Reggiano” and “Swimming Eel” has a reputation of being nearly impossible.
